Quick, Easy and Healthy Cooking Using a Wok

The stir-fry cooking method using a wok originated in East Asia thousands of years ago. It is used for stir frying, but can also be used many other ways, such as in steaming, deep frying, braising, stewing, smoking, or making soup. Every kitchen in South East Asia stocks several different sizes, and a wide variety of recipes have been passed on from generation to generation.

Shortage of fuel was the reason the wok was created and the fact that metal working cultures started evolving around the same time.

This versatile round-bottomed cooking vessel makes it possible to move the food around fast without using much oil, which makes it much healthier than European or American cooking methods. The secret of a good stir-fry is to cut the ingredients in bite size pieces, and veggies on the bias. On the bias means cut at an obliquely edge, which gives it more cooking surface.

When you stir-fry meat, you have to heat the oil, add the meat and stir it around for a few minutes before adding the rest of the ingredients. In a lot of fish recipes, you see that I add the hard veggies first, then the soft veggies and then the fish. So what are hard veggies: carrot, broccoli, turnip, cauliflower, greens, cabbage, sprouts, onion etc Soft veggies are: hot peppers, bell peppers, Napa cabbage, spinach, arugala, cucumber You get the drift. 1 Tablespoon hot sauce
1 teaspoon salt
Serve over rice of choice


1 – Cut ingredients into desired sizes.
2 – Add a little oil or cooking spray of your choice to the pan. Heat pan to 375° F/ medium high heat.
3 – Add tilapia and GGS. Stir around for 2 minutes.
4 – Add orange segments, pistachio nuts, rum, Tabasco, and salt to taste. Stir around for an additional minute.

Serve over rice of choice.

How Easy Healthy Recipes for Dinner Revived My Love for Cooking

As I grew older I learned how to experiment with
dishes that I loved. We had this Sunday barbecue tradition in the family
wherein I would showcase the best marinade for chicken
that I mixed or my easy pork marinade variant
for the week. I learned how to prepare fresh garden salads using my mom’s
secret raspberry vinaigrette dressing recipe. In
support of my culinary inclination, my parents gifted me with an herb garden
that I diligently cultivated throughout high school. It provided me a ready
stash of fresh basil, rosemary, thyme and oregano whenever I needed it for the
dishes I cooked.


But things changed when I went to college. I lived
on-campus and became too busy with academic responsibilities that I started
neglecting my love for cooking. There simply wasn’t anytime to experiment in
the kitchen if you have a gazillion of term papers to write. I lived off fast food
and would sometimes skip meals if I was pressed for time. I wasn’t eating
right. I became unhealthy and had to be hospitalized several times because of


When I landed my first job, I resolved to start
eating healthy again. Aside from daily exercise, I began preparing my own food
using recipes I’ve researched on the internet. Food magazine subscriptions also
came in handy. What I gathered were easy to prepare, low-fat, low-calorie

Grilled Curried Shrimp with Mango Couscous

Prep time: 10 minutes

Cook time: 10 minutes

Makes: 4 servings



1 cup whole wheat couscous

1 mango, peeled and diced

1 teaspoon finely diced jalapeno pepper

1 tablespoon plus 1 teaspoon freshly squeezed lime

1/4 cup chopped cilantro


Freshly ground black pepper

2 tablespoons red curry paste

2 teaspoons vegetable oil

1 tablespoon plus 1/2 teaspoon finely minced garlic

3/4 pound shrimp, cleaned and shelled, tails on

1 7-ounce container 2 percent Greek yogurt

1 teaspoon grated ginger

Lime wedges (optional)



1. Cook couscous according to package directions.
Combine with mango, jalapeno pepper, 1 teaspoon of the lime juice, and half the
cilantro. Season to taste with salt and black pepper.

2. In a large bowl, whisk together red curry paste,
vegetable oil, 1 tablespoon of the garlic, and remaining lime juice. Add
shrimp; toss to coat.

3. Mix together yogurt, ginger, and remaining
cilantro and garlic in a small bowl. Season to taste with black pepper.

4. Heat a grill to medium high. Grill shrimp until
just cooked through, about 2 minutes per side.

5. Arrange shrimp and couscous on a platter and
serve with the yogurt sauce. Garnish with lime wedges if desired.


Just remember, have fun in the kitchen and make every

Healthy Cooking is Easy? What is Up With That?

There is a couple of misconceptions with cooking. Firstly, good cooking takes time and secondly, healthy cooking isn’t easy. There are certainly dishes that take some time to make and there are also complicated dishes that aren’t very easy but there are lots of dishes that can be 30 minutes or less that are healthy. Another misconception is that if you eat healthy you will lose weight. Unfortunately that isn’t true (to my great dismay), you can overeat with healthy food the way you can overeat with unhealthy food.

But even if you overeat healthy food, you are still better off than if you overeat unhealthy food. You notice I haven’t specifically mentioned fast food because even though it is very unhealthy it’s not the only unhealthy food. All of that canned/frozen meals you can buy in the grocery store can be unhealthy too. A rule of thumb when looking to buy already prepared food/meals from the canned food aisle or the freezer/refrigerator section of your grocery store. Look at the ingredients list, if you can’t pronounce some of the ingredients them don’t put them into your stomach. There is also a lot of salt/sodium in these products. If you must use some of these products use low sodium or no salt added products.

Now back to the easy healthy part. Here is an example of the easy part – a pasta sauce can be very quick and easy. Like this one. Cook the pasta according to package directions and while that’s cooking put a tablespoon of olive oil in a frying pan that has been on medium heat for a few minutes. Let the oil heat for a minute (never use high heat unless you’re just boiling a liquid) and add a couple of cloves of minced or sliced garlic (more if you really like garlic) – if you use the jarred minced garlic then 1 teaspoon per clove – and let cook for a minute (don’t overcook, when garlic burns it ruins the whole dish). Add 4 or 5 fresh chopped basil leaves, salt and pepper to taste, zest and juice from half a lemon and cook for another minute. Remove from heat add a ladle of the pasta water and the drained pasta and stir well. Add a good handful of grated Parmesan cheese and serve. This sauce will take about the time it takes to cook the pasta in the boiling water.

If you boil the water in a kettle it shouldn’t take more than a couple of minutes and when the water is put into a pot and put on the burner it shouldn’t take more than a couple of minutes to come to a boil. Add a good handful of salt to the water (never add any oil to the water it isn’t necessary and you want the starch of the pasta to help the sauce stick to the pasta) and add whatever pasta strikes your fancy. Most pasta will not take more than 10 minutes to cook and the sauce shouldn’t take more time than that to make. Try this and tell me it isn’t delicious. The more fresh ingredients used the more healthy the food, like lemons, basil, garlic, fresh ground pepper, kosher or sea salt from this recipe. You can also add some fish like shrimp or scallops with the garlic and they will be cooked by the time the sauce is finished. You can’t get easier, quicker or healthier. This is just one example, there are many others. I am going to issue a challenge to anyone that is interested, if you still think cooking can’t be easy, let me prove you wrong and you won’t have to pay for my services.

Visit the market an hour before closing time and see for yourself. A few bags of cheap fruit and veg can feed your family one way or another for weeks – if you use it correctly.

Budget cooking or cooking on a budget can be so easy. Budget cooking is not a science. We should also follow the seven Corporal Works of Mercy – feed the hungry, give drink to the thirsty, clothe the naked, shelter the homeless, visit the sick, visit the imprisoned, and bury the dead. We can also commit seven Capital Sins – pride, covetousness, lust, anger, gluttony, envy and sloth.

1. one cup of soy milk
2. three table spoons of yogurt
3. three tablespoons of flax seed
4. one heaping teaspoon of cocoa or coffee
5. five dried prunes or apricots
6. one quarter of lemon, with peel or a slice of fresh ginger
7. one banana

You can buy these ingredients at many stores in many countries.

Mix everything in a blender, until its texture resembles that of a heavy cream. If the final product is too thick, add more soy milk, and mix. If it is too thin or not sweet enough – add one more banana. You may add some cinnamon for taste.
